Monica's Recipe of The Month
Welcome to the first of many blog posts for our new segment, Monica’s Recipe of the Month! Some of you may already know this, but in case you haven’t heard, catering is how Monica started her niche! While we can’t give away the secret to our gourmet cookies, we can give you a recipe each month that’s a personal favorite from Monica’s kitchen.
And being that Mother’s Day is this week, and we all enjoy a good mouth-watering cake, we wanted our first post to be a Harvey Wallbanger Cake, a staple at Monica’s Mother’s Day Table and one that will leave you wanting to lick all the frosting.
Harvey Wallbanger Cake Ingredients:
- 1 box of yellow cake mix
- 4 eggs
- 1 (3.5 oz) package of instant vanilla pudding
- 1/2 c of vegetable oil
- 1/2 c orange juice
- 5 fluid oz of Galliano liqueur
- 1 c Pillsbury white frosting.
- 5 fluid oz of vodka.
How To Make The Harvey Wallbanger Cake:
- Preheat your oven to 350 degrees.
- In a bowl, combine cake mix and vanilla pudding. Then, blend the eggs, vegetable oil, 4 oz vodka, 4 oz Galliano, and 4 oz of orange juice. Mix batter until smooth. Do not overmix.
- Pour into a greased bundt pan, and bake for 45 minutes.
- Let the cake cool, then mix the remaining vodka, Galliano, and orange juice with the frosting. (really whisk together if clumpy) Place it in the microwave for 5-10 seconds if the icing is too thick. Then, pour or spoon it over the cake.
** Always great to make the day before, so the icing soaks into the cake.**
